Hope you had a lovely Thanksgiving yesterday. We just came off of a two week flu and double ear infections with my youngest, so decided it was best to lay low and stay home and have a low-key Thanksgiving yesterday. It was a nice day, as everyone got to sleep in, and we ate later on in the day, without needing to spend all day cooking and baking. And, when night time rolled around, we snuggled up on the couch together and watched a few holiday movies, as we admired our Christmas tree all lit up and decorated. Usually I would be spending my Thanksgiving night running from store to store trying to score pre-Black Friday deals, and then waking early to hit the stores again this AM for all the deals. But, this is the first year I got all my holiday shopping done by the beginning on November, so I wouldn't have to deal with crowds, increased prices, and toy sellouts. Plus, I think it helps now that the girls are getting older and understand Christmas and give me a shorter list of things they really want, and not want just because they saw a cool commercial for a must have toy that doesn't get played with after the tree comes down. Now, I am enjoying the extra quality time together snuggling up watching classic holiday movies, or rolling up my sleeves and baking alongside them in the kitchen. This is how I always envisioned the holidays, with less stress and more memory making, so it is a nice change.
Last night while we were watching the new "A Christmas Story Christmas" streaming now on HBO Max, we snacked on Cookie Pop and Candy Pop Popcorn. If you have never tried these SNAX-Sational Brands popcorn and love popcorn with add-ins, you are missing out. I was recently sent their two new holiday flavors -- Peppermint Hot Chocolate Candy Pop Popcorn and Iced Gingerbread Cookie Pop Popcorn to sample with my family. I was saving these popcorn bags to enjoy while we were watching holiday movies together -- and yesterday was the first time we tried this brand and these flavors --- and, we LOVED them both!
Usually I am not a fan of popcorn with add-ins or coated popcorn, but I have to say, these two popcorn flavors were really good. They weren't overly sweet, and had a nice crunch to them. Like with your favorite chips, once you start eating this popcorn, it is hard for you to stop. I am just happy that we were sent two bags of each to help with our sampling/review, as we finished off the first bags, and my husband and girls were looking for more. By the end of the movie, we were full of Cookie Pop and Candy Pop popcorn, and new fans of the brand. After the movie, we visited the SNAX-Sational Brands website to check out the other flavors of these popcorn, and made a list of the flavors we wanted to try. I showed my girls how you can also bake with these popcorn flavors, and we have a few recipes including the iced gingerbread bundt cake we want to try for the holidays.
Iced Gingerbread Cookie Pop Bundt Cake:
Ingredients:
1/2 cup crushed Gingerbread
1 (5.25oz) bag of Cookie Pop Iced Gingerbread
Cooking spray, for pan
1 1/2 c. (3 sticks) butter, softened
2 c. granulated sugar
4 large eggs
1 tbsp. vanilla extract
1/2 tsp. almond extract (optional)
3 c. all-purpose flour
6 tbsp. cornstarch
2 tsp. baking powder
1 1/2 tsp. kosher salt
1 c. whole milk or almond milk
FOR THE GLAZE
Instructions:
Make cake: Preheat the oven to 350°. Grease a 12-cup bundt pan with cooking spray. In a large bowl using a hand mixer (or in the bowl of a stand mixer), beat together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Add vanilla and almond extracts and mix until combined.
In another large bowl, whisk together flour, cornstarch, baking powder, and salt. Add half of the dry ingredients to the wet ingredients, beating until just combined. Pour in milk and mix until fully incorporated, then add remaining dry ingredients and stir until just combined.
Pour batter into a greased bundt pan and smooth top with a rubber spatula. Bake until a toothpick inserted into the middle of the cake comes out clean, about 55 minutes. Let cool in the pan for 10 minutes, then invert onto a cooling rack to cool completely.
Make glaze: Whisk together powdered sugar, milk, vanilla, and salt. Pour over cake and serve.
Once the icing is on the bundt cake,add all the popcorn sticking it onto the icing to harden as a layer over the entire bundt
