It's Wednesday...and, you know what that means...!!!!
What did you have for dinner tonight? Seeing that it is Wednesday, it is Prince Spaghetti Day in our house. It has been like this every Wednesday since I was a child and can remember. Born and raised in the Boston area to an Italian family, including my father's mother and sisters who came here from outside Sicily, I have grown up eating pasta a few times a week. In addition to Prince Spaghetti night on Wednesdays, I also make a point to make homemade pasta sauce from scratch and have family over at least twice a month on Sundays for a family dinner. This was tradition in our house when I was a child, as we would visit my grandmother and aunts in Boston and they would have a feast of sorts ready for us to Mangia Mangia (eat, eat), which includes homemade pasta and ravioli with homemade pasta sauces, along with out of this world Italian pastries and cookies. Mmm, I am getting hungry just thinking about the good 'ole days of Sunday pasta dinners with our family.
Now, I am enjoying carrying on the tradition by hosting Sunday dinners at my house for family and friends, so that we can gather, enjoy good conversation and great food! My favorite pasta dish to serve up that everyone always reaches for seconds and thirds is Cavatelli with roasted vegetables and ricotta. It is so easy to cook up and tastes great! :-)

I had no idea that there was a national pasta month. The recipe above looks amazing and one I have not yet tried.
