One of my New Year's resolutions was to eat more seafood, as it offers so many great health benefits, that I feel my diet has been lacking. While I don't want to skimp on flavor, I also don't want to break the bank when it comes to buying fresh seafood. I learned the lesson never to send my husband to the fish market, as he pays no attention to pricing. Last year for a summer lobsterbake, he ended up buying $40 lobsters. Ouch! While they tasted amazing, I know the quality and taste would have still been the same for smaller lobsters.
When it comes to seafood, I love lobster, while my husband is a fan of salmon and tilapia. Because we can't afford lobster for every seafood craving or meal, or have time to visit a fish market, I rely on Gorton's frozen seafood to create amazing seafood dishes. I was asked to try out a recipe from the many found at Gorton's or create my own. After browsing the Gorton's recipes, I just had to try their Grilled Salmon Piccata. My husband, who is a fan of salmon, turned me on to this fish, and this one of my favorite seafood to cook with, as it is so versatile, and tastes great with whatever you pair it with -- salad, pasta and even a side of steamed vegetables.

This recipe is fantastic over your favorite pasta. Just heat all ingredients in a saucepan and pour over cooked Grilled Salmon Fillets.
INGREDIENTS:
2 Gorton's Salmon Classic Grilled Fillets
1 Tbsp vegetable or olive oil
3 cloves garlic, minced
1 Tbsp flour
1 Tbsp butter
1/4 cup lemon juice
3/4 cup white wine or chicken broth
1/3 cup capers, drained
1/4 cup parsley, chopped
Salt and pepper
DIRECTIONS:
1. Prepare Gorton's Salmon Classic Grilled Fillets according to package instructions.
2. In the meantime, saute garlic in a large skillet for 2 minutes over medium heat, combine flour and butter with garlic and saute 2 more minutes, stirring constantly.
3. Using a wire whisk, gradually add lemon juice, wine and broth to the flour mixture and bring to a boil, remove from heat, add capers, parsley, salt, pepper, pour sauce over cooked fillets and serve immediately.
