Are you an avocado fan? I was never a fan of them until I began dating my husband who is from El Salvador. This was a staple in many of his mom's dishes, as well as on hand to snack on. Prior to meeting my husband, the only time I had ever tried avocados is when my mom started making her own homemade guacamole recipe for parties and family gathering. But, for some reason I just didn't care for the creamy texture or taste. If you spoke to my mom, she would just say that I was being me, a picky eater. :-) Now I know how she feels as I have a picky eater in our house, Savannah.
When I married my husband, his mother shared some of my husband's favorite recipes with me, so that I could make them for him. As I flipped through the recipe cards, I found most recipes called for avocados. Hmm, I thought. "If I am going to eat this meal with him, either I will have to start liking avocados, or leave them out." I tried the latter, and my husband was quick to point out that I had left out the avocado. So, I started making the recipes the way he grew up eating them, and over time, found myself loving avocado. And, now whenever I find time to try out new recipes or create a recipe of my own, I always try to add avocado into it. This is how I came up with Avocado Banana bread.
A few months ago, I was in the kitchen whipping up banana bread to use up ripe bananas, and every time I went to move things on the counter, this one avocado kept rolling into the bowl or near me. So, I thought, "What the heck? Why not add an avocado to the mix?" I thought the creaminess of the avocado would add to the sweetness of the banana and make for a very moist bread -- and, I was right. It came out great, and everyone loved it -- including Savannah. The first thing Savannah noticed with this bread was that it was green...her favorite color. She thought I had made it especially for her. And, since, whenever she is looking to bake with me in the kitchen, she will ask if we can make her green banana bread. :-)
Want to try this recipe the next time you need to use up ripe bananas? Here is the recipe.
Avocado Banana Bread
If you get a chance to try it out, I would love to hear your thoughts, or see how you tweaked it to your family's liking. I like to switch it up and add either walnuts or semi-sweet chocolates on occasion, or just simply go with the basic banana bread. Each and every time I make this, the house smells great, and by the next day, the bread is usually gone. I love warming up a piece the next morning and add homemade walnut or maple butter to it. Mmm, I am getting hungry just thinking about it! :-)
While in the kitchen the other day, I was able to try out some fun new gadgets from Good Cook, as part of their Exceptional Avocado Event I signed up to participate in, along with 60+ other Good Cook Experts. We were given the taste to create a recipe using avocado, that we could use their ProFreshional avocado slicer with.
In addition to the ProFreshional Avocado slicer that was sent to review, I was also sent two other fun tools -- the Citrus Zester and the Citrus Reamer. I used the excuse that I had to try out these kitchen tools ASAP with my husband, just so I could get some time in the kitchen. :-) I first time out the Citrus Reamer, which I love.
In the past, I would roll the lemon on the table to loosen the juice, and then squeeze the juice into a mesh sieve, to catch the seeds. I never could get all the juice out of the lemon. But, with the Citrus Reamer by Good Cook, I couldn't believe how much juice I was able to get out of one lemon. As for the Citrus Zester, I usually add lemon zest to many of my dinner and dessert recipes, so loved this tool.
Compared with other zesters I have used and own, I have to say that I loved the easy grip handle of this zester, and how it allowed you to zest with ease. These two kitchen tools, along with the ProFreshional Avocado Slicer, were a treat to use, and are a must for any cook. They would also make for a great housewarming or bridal shower gift. And, with the holidays around the corner, what cook wouldn't want a stocking full of kitchen tools like these? :-)
