I can't lie -- even though I like to eat healthy, I also have a weakness -- my sweet tooth. Put anything chocolate or sweet for that matter in front of me, and I will not turn it away. :-) Don't get me on a crazy day with the girls, as I could eat a whole tray of chocolate chip cookies by myself. So, when I was recently sent samples from Cookie Chew, I was in heaven. Not only did we not have any sweets in the house, but I had been working off of 3-4 hours of sleep the night before, and two girls who didn't nap all day. So, when my husband came home from work, I was ready to feed the girls, bath them, put them to bed, and then settle down and have a few of these delicious looking cookies, with a cold glass of milk.

Yummy looking, huh? Well, they were -- each and every cookie. :-) The first night of having these Cookie Chew cookies in the house, with the help of my husband, of course, we ate 6 cookies. It was so hard stopping after the first, second, ..., as they were oh, so good. I am a fan of thick, chewy cookies, and these fit the bill.
Out of all the cookies samples, I have to say my favorites were the Peanut Butter Truffle Stuffed and Velvet Love Red Velvet Stuffed cookies. My husband, on the other hand, loved the Mexican Hot Chocolate and Mudslide Cocktail cookies.

About the Creator of Cookie Chew, Liz Barhydt:
“Desserts have always been my weakness! Whether it’s chocolate, cookies or just plain sugar, I just love the sweet (I know cliché) comfort it brings.” says baker and owner, Liz Barhydt whose San Diego based cookie company has been inventing and creating different and unique cookie flavors since 2007. Growing up in a family and a culture centered around the dinner table, the love of food and an adventurous spirit with culinary experimentation has been a part of her life since she can remember.
Creativity and entrepreneurialism was also a large part of Barhydt’s up-bringing with both parents involved in the arts and a father with a medical device business. It was the combination of these three things that formed the Cookie Chew and the unique and innovative cookies she creates. Barhydt’s signature cookies are her truffies, decadent rich truffle stuffed chewy brown sugar cookies. It was the response to this line that encouraged Barhydt to expand the stuffed cookie concept and create other different and unusual ways to create a cookie. She is constantly inventing new flavor combinations and prides herself on her ability to turn “mass appeal” food groups into delicious dessert bites.
No stranger to the food world, Barhydt worked in restaurants a total of 10 years prior to inventing her stuffed cookies, and it was in this environment her love of food and flavor was honed and cultivated. Required to learn the characteristic traits of thousands of ingredients she uses this knowledge in her baking today.
Prior to founding Cookie Chew, Barhydt received her Masters in Accounting and Bachelors in Finance from Wake Forest University and worked as a CPA for large fortune 500 companies.
