I was recently sent a sampler kit to try out a handful of Erin Baker's treats, direct from her bakery.  Included in my sampler kit was her famous Breakfast Cookies and brownie bites to try out..  Being a chocolate lover, I grabbed for the brownie first!  Wow, it was so soft and moist -- like it was baked fresh for me that day!  And, the chocolate used was of high quality. You could tell that the bakers at Erin Baker's put a lot of pride into their work, and it shows with their product line.  Even though it wasn't breakfast when I received the package of baked goods, I still opted to try the Pumpkin Spice breakfast cookie.  I wanted to see if it really tasted like pumpkin spice, or if they just used spices to achieve a pumpkin flavor.  I ended up toasting this cookie prior to eating, and think this brought out the flavor of the pumpkin even more.  Just look at the nutritional facts and ingredients of this popular, low-calorie breakfast cookie:

Whole Grain Oats, Unbleached Wheat Flour (unbleached wheat flour, niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid), Prune Puree, Organic Evaporated Cane Juice, Pumpkin Puree, Brown Rice Syrup, Expeller Pressed Canola Oil, Chicory Extract, Water, Molasses,Pumpkin Pie Spice, Baking Soda, Pure Vanilla Extract, Dried Egg Whites, Sea Salt, Soy Lecithin, Aluminum-Free Baking Powder, Cinnamon.

Now, how can you feel bad eating such a sweet treat?  I sure didn't!  Again, I couldn't believe how much you could taste the pumpkin flavor in this cookie.  It really did satisfy my sweet tooth.

Over the next few days, I had the remaining samples from the sampler kit I was sent, and each and every time, I fell in love with the flavor I was eating.  So, in the end, besides the brownies (which I loved because of the chocolate flavor), I couldn't decide on a favorite breakfast cookie from Erin Baker's.  Each cookie brought their own unique flavor that made you crave more, even though it gets you full after just a few bites. If you get the chance t try out these breakfast cookies for yourself, I highly suggest warming them in the microwave for a few seconds or toasting them.  They taste great warmed up!

In addition to their breakfast cookie line and brownie bites, Erin Baker's also offers homemade granola that is to die for.  You can either have it as a cereal or put in a bag and munch on when you are on the go!
